Ingredients
1kg Lamb pieces
3 Large Potatoes
1 Cup of Rice
2 Courgettes
3 Carrots
Onion
Cumin
1 Tomato can
Half a glass of Olive Oil
Half a glass of Water
Method
Place the lamb pieces in a large pyrex, add the cup of uncooked rice, the sliced courgettes and carrots
Distribute the ingredients evenly
Add in the Can of tomatoes
Mix the tomato in well with the other ingredients. Add in the ground cumin.
Add a layer of potatoes on top
Drizzle olive oil, pour half a glass of water and add more ground cumin on top.
Cook for 2 hours at Gas Mark 4/ 180C (350F)
After 2 hours, turn the heat up to Gas Mark 6/ 200C (390F). Remove the foil and place back into the oven. Cook for a further 45 minutes, until the lamb and potatoes have browned slightly and the liquid has reduced.
**Chicken can be used instead of lamb or even the recipe can be made without any meat, exclude the meat from the recipe to make it a vegetarian meal.
