星洲米FRIED MEEHOON SINGAPORE STYLE

材料A:

3大匙油,

200g米粉,浸软,沥干

2粒蛋,打散,炒香,切丝

材料B :

2大匙油,

1大匙蒜茸

1粒洋葱,去皮,切丝

材料C:

100g叉烧,切丝,

100g虾仁

50g黄芽白,切丝,

50g芽菜2条红辣椒,切丝

50g韭菜,切成3cm长

调味料(拌匀):

3大匙蕃茄酱,

1大匙辣椒酱

1大匙蚝油,

2大匙急汁

1大匙生抽,

1小匙黑酱油

少许麻油,盐和胡椒粉,

100ml水

1粒酸柑

做法:

1,烧热3大匙油,放入米粉煎至金黄色及香,放进热水中烫一烫,盛起沥干。

2,另热2大匙油,爆香蒜茸和洋葱丝。

3,加入材料c炒香,加入煎香的米粉和调味料拌炒均匀及香,盛起

4,加入蛋丝,挤上酸柑汁便可享用。

注:如嫌要将米粉煎香才炒太麻烦的话,可将米粉浸软便直接炒,但煎过的米粉炒起来更香口呢!

**INGREDIENTS A: **

3 tbsp oil,

200g meehoon, soaked and drained

2 eggs, beaten, fried and shredded

**INGREDIENTS B: **

2 tbsp oil,

1 tbsp chopped garlic

1 onion, shredded

**INGREDIENTS C: **

100g char xiu, shredded

100g prawn meat

50g Chinese cabbage, shredded

50g bean sprout

2 red chillies, shredded

50g chives, cut into 3cm length

**SEASONING (MIXED): **

3 tbsp tomato sauce

1 tbsp chilli sauce

1 tbsp oyster sauce

2 tbsp worcestershire sauce

1 tbsp light soya sauce mix

1 tsp dark soya sauce

dash of sesame oil, salt and pepper

100ml water

1 lime

**METHOD: **

  1. Heat up 3 tbsp oil, put in meehoon and pan-fry until golden brown and aromatic. Soak in hot water for a gth short while. Dish and drain.

  2. Heat up 2 tbsp oil, saute chopped garlic and onion shreds until fragrant.

  3. Add in all ingredients C and stir-fry until fragrant. Add in meehoon H seasoning and stir-fry until well mixed. Dish up.

  4. Add in shredded fried eggs and serve with lime juice.

Note: As an alternative meehoon may be saaked with water soft but the pan-fried meehoon will yield more aromatic flavour.
