嗨,大家好。今天我要介绍的是苦瓜食谱。在炎热的天气里,苦瓜是一道可帮助清凉解暑的菜肴。大家快来试一试噢!
豆豉生肉炒苦瓜
食材
白苦瓜 ∼ 150克
猪肉 ∼ 150克
黑豆豉 ∼ 30克
姜 ∼ 40克
甜酱油 ∼ 1汤匙
米酒 ∼ 1小匙
玉米粉 ∼ 1茶匙
食油 ∼ 1汤匙
盐 ∼ 半小匙
做法
首先,将猪肉洗净,在砧板上将肉切成小薄片状,再用刀背轻轻拍打肉,或是用脆肉棒轻轻拍打一会儿,这样不但有助于肉里纤维松散,使肉更嫩,而且节省腌制时间,让肉在焖煮时更容易入味。将拍打好的肉放入碗中,加入盐、玉米粉和两汤匙的水搅均,然后放一边腌制20分钟左右。腌制好后将水沥干备用。
在等待猪肉腌制的同时,就把握时间处理好苦瓜。在这到食谱中我用的是白苦瓜,如果买不到白色的,青苦瓜也可以代替它。将苦瓜洗干净。然在把白苦瓜从中间切开两半,取出内部的种子,再切成薄片状备用。
苦瓜性凉,加入姜片可以帮助去寒,也可以去除肉腥味。把姜洗净,可以去姜皮或将皮保留,我习惯把姜皮去掉,再切成薄片状或姜丝备用。不喜欢姜味的朋友可以用蒜末代替姜。
等猪肉腌制好了,就可以热锅将以中火将食油烧热。加入姜片、盐和黑豆豉煎一会,并用锅铲将黑豆豉压扁让豆豉味更容易出味些。
等到姜片豆豉煎香后,就可以把肉倒入锅内煎一会,一分钟左右,煎香后就倒入苦瓜以中火继续拌炒两分钟。再倒入米酒拌炒。
加入¾杯水入锅,转大火将水煮沸,盖上锅盖,转中火再焖煮5分钟左右或至苦瓜焖软为止。
打开锅盖,加入酱油调味。如果觉得不够味,还可以以个人口味加入蚝油调味。调好味就可熄火,把菜取出锅端上桌慢慢享用了。

不错的建议,也有不少人用盐腌制去苦水再炒,再加糖烹调。不过我还没试过,因为我们全家都不怕吃苦,哈哈😄!
我们喜欢用辣椒炒,苦一点也更好吃

是用小辣椒还是辣椒干?
当然是新鲜辣椒,青椒或者小红椒都可以。
