Vegan watermelon and blueberry salad.

When eating healthy is nothing better than a good salad, and if we combine the dressings and vegetables enjoy the salads as never before, also its fresh color invites you to eat a good dish of this salad.

Some vegetarians may eat eggs, milk or honey. Vegans, on the other hand, don't take anything that comes from animals, not even insect honey or gelatin derived from animals! They eat vegetables, fruits, cereals, nuts, sprouts.

So this recipe suits vegans, who like to eat healthy, but have an exquisite palate to savor such rich menus, I share the recipe: watermelon with blueberries.

Ingredients:

  • 4 cups seedless watermelon, cut into half-inch cubes.

  • 1 cup blueberries.

  • 150 grams of firm tofu

  • 2 tablespoons fresh mint.

  • 4 tablespoons olive oil.

  • 2 spoonfuls of lemon juice.

  • Salt and pepper. ( to taste )

Instructions

Cut the watermelon into cubes. In a bowl, combine watermelon, blueberries and place tofu, refrigerate covered until time to serve. Apart is placed olive oil, lemon, salt and pepper to taste mix well and when serving the salad is added this dressing, garnishing with fresh mint leaves.

Interesting, combining salty and sweet flavors. I am not vegan but I would like to make your recipe to see how it taste. Anyway good post man!
