Dear Steemians,
after awhile I'd like to write about an indonesian food recipe again.
This time I offer you a rather high calory dish, however I'd say that it's not so unhealthy because it's using coconut milk. And it is definitely delicious. ^_^
This food is called "Opor ayam", or might also be named "Gulai Ayam" depends on your preference, whether you'd like it to be spicier or rather mild.
If you prefer to have "Gulai Ayam", the only thing you need to do is to add some chilis (the amount of chili is adjustable to your own preference), a little bit of fennel and nutmeg.
In addition you should reduce the amount of Kemiri by 2 pieces, use less turmeric and just leave the sugar completely.
These are the ingredients:
- ca. 600 gram-1 kg chicken leg or breast
- 2 cm ginger
- 1 tsp tamarind paste
- 2 cm Laos (Galangal / Thai-Ingwer)
- 1 tsp tumeric
- 5 Kemiri (you can use almond as an alternative)
- 1 tbsp coriander (granule) oder 1 tsp if it's the finely ground one
- ½ tsp ground blackpepper
- ¼ tsp caraway
- a pinch of cinnamon
- 1 big onion or 3 small shallots
- 4 cloves garlic
- 2 cm Kencur (Kaempferia galanga).
I used the dried version so I need to soak it in water for a while before we could grind it together with other spices.
But you can also buy the ground version, which you can buy online if it's not available in the asian shop at your place.
In this case 1/4 tsp would be enough.
- 1 tsp palm sugar oder brown sugar
- some salt
- 4 pieces lime leaves
- 1 lemongrass
- some oil to sauté the spices
- 500 ml coconut milk
Instruction:
All the ingredients except lime leaves and lemongrass should be ground using mortar or food processor and then to be fried/sautéed until it's being fragrant.
Smash the white part of lemon grass or slice it into pew parts. Fry the lemon grass and limr leaves together with the spices.
Be careful not to let it burnt.
If you use a food processor, you can directly add the oil in the maschine so that it's easier to grind.
Then pour the coconut milk in the cooking pot and of course the meat.
If you prefer to have a lighter taste of (more liquid) soup, just add some water in the coconut milk (100-150 ml should be ok).
The Indonesians like to put some hard-boiled eggs or tofus in this dish as well, so if you're vegetarian just replace the meat with tofus or eggs completely.
I always prefer to eat chicken legs or wings compare to breast because of the bone marrow and the fatty skin LOL.
But my husband always prefer to eat the breast part, less fat and no bone.
Well, I wonder if he realises that the tasty broth comes from the bones. ^_^
This dish would taste more delicious if we leave it over night (of course it needs to be re-heated again before it's served).
But if we want to serve it straigt away then just cook it longer until the coconut fat is coming out (you can definitely notice it as oil and water is not a "good friend". :-D
I would say that 1- 1,5 hour should be enough.
Of course you need to reduce the heat after the meat is well cooked.
As I've mentioned before, the plate with chicken leg in it is for me and the one with chicken fillet is for @jaki01 ;-)

nach langer Zeit möchte ich euch heute wieder ein Rezept vorstellen.
Diesmal ist es ein relativ fettiges Essen, aber super lecker. :-D
Es handelt sich um das in Indonesien sehr beliebte „Opor Ayam“ bzw. „Gulai Ayam“ (die etwas schärfere Version).
Um das Rezept für „Opor Ayam“ in „Gulai Ayam“ umzuwandeln, müsst ihr nur ein paar rote Chilis (je nach Geschmack), ein bisschen Fenchel und Muskatnüsse dazugeben.
Dafür werden dann zwei Kemirinüsse weggelassen, etwas weniger Kurkuma und kein Zucker verwendet.
Zutaten:
- ca. 600 gram-1 kg Hähnchenkeule oder Brust.
- 2 cm Ingwer
- 1 TL Tamarindepaste
- 2 cm Laos (Galgant / Thai-Ingwer)
- 1 Tl Kurkuma
- 5 Kemiri-Nüsse (ersetzbar durch Mandeln)
- 1 EL Korianderkörner oder 1 TL gemahlener Koriander
- ½ TL gemahlener Pfeffer
- ¼ TL Kümmel
- Eine Prise Zimt
- 1 Zwiebel oder 3 kleine Schallotten
- 4 Knoblauchzehen
- Auf 2 cm Länge geschnittenes Kencur (Gewürzlilien = Kaempferia galanga).
Ich habe die getrocknete Version benutzt und musste das Kencur deshalb erst eine Weile in Wasser aufweichen lassen, damit es später leichter zu mahlen war.
Es gibt auch die bereits gemahlene Version, die man online bestellen kann, falls es keinen indonesischen Laden in der Stadt gibt.
Wenn ihr die gemahlene Version verwenden möchtet, solltet ihr ungefähr 1/4 Teelöffel davon verwenden.
- 1 Teelöffel Palmzucker oder Rohrzucker
- etwas Salz
- 4 Keffirlimettenblätter
- 1 Zitronengras
- etwas Öl zum Anbraten
- 500 ml Kokosmilch
Anleitung:
Alle Gewürze außer die Keffirlimettenblätter und das Zitronengras sollten mit einem Mörser oder einem elektrischen Zerkleinerer gemahlen werden.
Wenn ihr einen Zerkleinerer verwendet, könnt ihr gleich noch etwas Öl dazugeben, damit die Maschine besser arbeitet.
Danach kann man die Gewürzpaste solange anbraten, bis es beginntt, gut zu riechen. :)
Vergiss bitte nicht, das Zitronengras und die Limettenblätter in die Pfanne hinzuzufügen!
Das Zitronengras sollte zuerst leicht mit dem Mörser geschlagen oder in ein paar Teilen zerstückelt werden.
Achtet gut darauf, dass nichts anbrennt. Als nächstes wird Kokosmilch in den Topf gegossen.
Wenn ihr lieber etwas flüssigere Suppe haben möchtet, könnt ihr die Kokosmilch noch mit ein bisschen Wasser (100 -150 ml) verdünnen.
Als Proteinquelle könnt ihr außer Hähnchenfleisch noch hartgekochte Eier und Tofu hinzufügen.
Vegetarier können das Fleisch komplett durch Tofu und Eier ersetzen.
Ich mag am liebsten Hähnchenkeulen und Flügel wegen des Knochenmarks, aber mein Mann mag keine Knochen, weshalb ich für ihn noch viel Brustfilet in die Suppe tue.
Dieses Essen wird noch leckerer, wenn es über Nacht stehen gelassen und erst am nächsten Tag gegessen wird (natürlich sollte es dann noch einmal erwärmt werden).
Ansonsten kann man es auch etwas länger kochen, bis das Fett der Kokosmilch in der Suppe sichtbar wird. 1 bis 1,5 Stunden sollten reichen. Sobald das Fleisch durchgekocht ist, sollte der Ofen natürlich auf eine niedrigere Stufe gestellt werden.
Und wie bereits erwähnt, ist der Teller mit der Hähnchenkeule für mich und der mit der Hähnchenbrust für meinen Mann. :-)

Aduh... kalau dikirim mah mahalan ongkos kirimnya daripada opornya hahahahaha. Kalau disini, opor mah bukan hidangan mewah... yang berharga itu semur jengkol, oseng teri, tempe penyet sambel terasi ...(khususnya kalau punya suami atau tetangga berhidung sensitif dan ngamukan kalau nggak doyan tapi harus ikut merasakan derita baunya wkwkwkkwkwk).
