cheese-y, creamy, healthy, gf, vegan MAC 'N' cheese. so first at all i have to tell u guys that i've never ate mac 'n' cheese haha its sad i know, i know, but i did'nt have chance. so this recipe i made for the first time, and completely don't know did it tasted like non vegan version bc i just did'nt ate this...
buuut i can promise u that this is heaven. sooooo good and sooo creamy. u have to taste them!
so here u have the recipe! also perfect for pack to school or lunch in the container, or to do meal prep for whole week :)

150 g of pasta
1 cup potatoes
1/4 cup onion
3/4 cup of water (from boiled veggies)
1/4 cup cashews (soaked)
1/4 cup canned coconut milk
3 tbsp nutritional yeast
1 tbsp lemon juice
pinch of salt
clove of garlic
pinch of pepper
pinch of smoked paprika
instructions:
boil the veggies until soft. blend everything together (use water from boiled veggies) and mix with pasta. add more spices if it's needed.
