Hey, Steemit. There's a hot roasted salmon steak for dinner tonight because I love fresh fish. Especially when fried in a cast-iron pan: It couldn't be more natural! This recipe is fast on the table, ideal for a dinner (because of low carbohydrates) and very healthy anyway. Here's the deal:
Ingredients for 2 persons
2 salmon steaks
2 red peppers
3 carrots
2 courgettes
10 cocktail tomatoes
5 tablespoons olive oil
2 tablespoons butter
pepper, salt, chili seasoning
Preparation
- Preheat the oven to 160°C (320°F).
- First of all, paprika, carrots and zucchini must have to be washed and cut into bite-sized pieces. Wash the cocktail tomatoes too and put everything together in a bowl. Season the vegetables with olive oil and season to taste with the spices. Mix all well. Then place in a baking dish. Cook 'em in the oven for 30 min.
- In the meantime, wash the fish well under running water and dab dry with kitchen towels. Then season the skin of the fish with pepper.
- Melt some butter in a cast-iron pan and fry the fish on the skin side. After about 10 min turn and season the other side with pepper.
- The salmon is cooked as soon as the flesh of the fish is completely white at the edges. Serve on hot plates with vegetables.
Did you know?
If you use a cast iron pan, clean it while the pan is still warm. Some hot water and a kitchen towel is enough. The patina, which is so important, will not break. Important: Oil the cast iron pan afterwards. So it does not rust and the patina remains.
