It is Monday and time for a fresh start to a new week. This pasta dish is perfect for a quick lunch or dinner: Very healthy and on the table within 15 minutes. Here's the deal:
Ingredients for 2
500 g pasta of your choice (e. g. Penne)
1 mature avocado
2 cloves of garlic
1/2 bunch basil
1 tablespoon freshly squeezed lemon juice
1 teaspoon water
2 tablespoons olive oil, minced parmesan
salt, pepper, some chili flakes
Preparation
- Cook pasta al dente so that they are still pleasantly firm to the bite. Season the water with a pinch of salt.
- Crush the basil with the garlic in a mixer. Then add lemon juice, water, olive oil and the flesh of the avocado. The lemon juice ads a nice freshness and prevents the avocado from turning brown too fast.
- Finally puree everything together until the pesto is creamy.
- Drain the pasta and mix in the pesto. When serving, season to taste with salt, pepper or chili flakes.
