PORK FILLETS WITH DRIED FRUITS

A tasty twist on your protein-packed pork meal – the kids will love it!
INGREDIENTS
3 pork fillets
1 brown onion – chopped finely
1 ½ cups of dried mix fruit
3 rashers of bacon
METHOD
Preheat oven to 390F.
Place your fruit in a bowl and cover with boiling water.
Soak until plump.
In a non-stick frypan over a medium flame, cook onion until tender.
Add your fruit in and mix together.
Slice a pocket in your pork fillets – be sure not to slice all the way through your meat.
Portion fruit, mix into each pocket.
Get wrapped a rasher of bacon around each fillet and secure with string.
In a non-stick frypan, over a medium flame, cook pork till the meat is sealed.
Place in a roasting dish and into the oven.
Bake for 20 minutes until tender.
Slice into thick slices and serve up.
