Yap, this is a good one. Every time I prepare this dish I know that I will be enjoying my meal. While it is true that this recipe takes a bit more time to make, you can trust me that it is worth trying if you like recipes which contain beans.
What I love about winter days is that it is always a good time to prepare something warm. Whilst in summer the situation is a bit different. In the summer warm meals are not on the menu as much. Something like salads or colder meals are on the menu more in the summer days.

Ingredients:
500g white kidney beans
6 medium onions
2 red peppers
3 cloves garlic
1 bay leaf
Tomato sauce
3 tbsp dry ground red pepper
7 tbsp vegetable oil for sautéing onions
8 – 10 tbsp vegetable oil for covering beans
1 tbsp wheat flour
¼ tsp cayenne pepper
1 tsp salt
Dash pepper
Yield:4 servings
Preparation:
Soak beans overnight in the water.
Drain the beans. Place them in the pot of water and bring to a boil. Reduce heat to medium and cook for 40 – 50 minutes until beans are tender. Drain the water from cooked beans into one cup and discard the remaining water.
Dice the garlic. Wash and slice red peppers into 2 cm long and 0,5 cm wide strips. Slice the onions.
Place 7 tbsp of vegetable oil in larger frying pan and place in sliced onions. Sauté for 10 minutes over medium heat.
Add diced garlic to sautéd onions and stir. Sauté for 3 minutes and add sliced red peppers. Sauté for another 5 minutes and add 1 tbsp of wheat flour, 3 tbsp ground dry red pepper, cayenne pepper and bay leaf. Stir and sauté for another minute and than add tomato sauce and 1/3 cup drained water from the cooked beans. Add beans and stir the mixture. Remove from the heat.
Grease the ceramic or glass pan and place in the mixture. Level it with the spoon and pour 8 -10 tbsp of vegetable oil over it. The oil should create the 0,5 cm layer over the top of the mixture. Place the beans in the oven and bake for 45 – 60 minutes depending how well baked you want them.
