Ingredients(Serving for 3):
2 cans of Chickpeas
1 Onion
2 Tomatoes
2 Carrots
1 garlic clove
1 pack of rice
1.5 cups coconut milk
Salt
Paprika
Mixed-herbs
Curry Powder
2 Plantain
Vegetable oil
3 cups of white rice
Drizzle some oil into your pot then pour your diced onions and tomatoes.
Measure your cups of rice depending on how many people you are serving for. For I am serving for 3 people so I will use 3. The pour (cups of rice) x (1.5) cups of water, for example I will pour 4.5 cups of water.
Cut 2 carrots into medium sized pieces then add them to the tomatoes and onions once they start to get soft.
Drain 2 cans of Chickpeas and pour them into the pot once the carrots soften a bit.
4 Tablespoons of Curry powder, 2 Tablespoons of Paprika, 1 Tablespoon of Mixed-herbs and season with salt to taste. Place the lid on top and let simmer for 5-10 min.
Now pour 1.5 cups of coconut milk into your pot, and cook for another another 20 min.
Whilst you are waiting for the curry to cook, slice 2 plantain at an angle and fry with a tablespoon of oil.
Once your curry is ready plate it with rice, plantain, avocado and some pita bread.
