We woke up to a really rainy Thursday. This made me think that it's the perfect day to bake cookies with the kids! Out of everything I bake the sugar cookies are the easiest and they disappear the quickest; even though they don't get icing. No refrigeration needed! You are done within an hour, start to finish.
Cooking with kids is not easy for me because I need to be able to control everything. Kids definitely don't care if they drop pieces of eggshells in the cookie dough or if only half the flour makes it into the bowl. They just want to lick the bowl:) This is a great recipe for a beginning baker or if you're just looking for something sweet on a rainy day with your kiddos!
Preheat oven to 350°F. Stir together the first 4 ingredients( or let your son do it and have a small stroke when it goes all over the counter)
Set aside the dry ingredients and let's move on to the wet ingredients.
Add the butter, granulated sugar, brown sugar, and vanilla to the mixing bowl. Mix on medium speed until creamed together. Then scrape the sides of the bowl and crack your egg in and mix just about a minute on medium speed. Scrape the sides of the bowl again.
Now the messy part starts if you're my kids.
It's time to start adding the dry to the wet. Add a cup at a time or you will regret it! Mix just long enough to incorporate then stop the mixer and add your next cup.
Make sure to turn the mixer off before letting the kids taste test, haha!
Roll the dough into about 1 inch balls then roll the dough balls in the remaining sugar to cover them with sugar. We made ours a little bigger this time but usually, you will end up with about 30 cookies and this time we had about 22.
These took 11 minutes to bake at this size, resulting in a chewy cookie. This is exactly what I wanted. Bake approximately 13 minutes if you like a little more done and 15 if you want a crunch. Much more than that and you will have a burnt cookie!
Thank you for reading my post and I hope you enjoyed reading it as much as we enjoyed baking them(and eating them)!
