These fluffy American pancakes make a delicious breakfast, dessert or even lunch or dinner. They are a healthy version of the all so famous American pancakes. But that doesn't mean that they lack in taste. In the contrast these pancakes have been highly rated by my family. My little brother isn't really a fan of American pancakes and prefers the Dutch thin pancakes, but that is changed now.
This week I have a one-week holiday, and I have really been feeling the fall vibes. The weather has turned into coat weather and the leaves have changed into colors of yellow and reds. The change in colors makes the streets just a spark more magically. It fascinates me that the colors of the leaves during fall differ every single year. Just like you can't find two finger prints that are the same.
What better way to celebrate this fall with a comforting recipe. American pancakes drizzled with maple syrup and flavored with fall themed spices make up for a perfect fall breakfast. Don't forget a delicious hot cup of tea or if you are really feeling fancy a mug of hot chocolate with whip cream. I would also recommend getting your favorite Netflix show on the screen. But a fun family gathering is also a perfect way to start the day.

Ingredients:
1 cup spelt flour
1 cup regular flour
4 tbsp baking powder
1/2 tsp salt
2 tsp coconut sugar
2 eggs
1 tsp coconut oil
1 1/4 cup almond flour
Instructions
Mix the spelt flour, regular flour, baking powder, salt en sugar together. In a seperate bowl mix together the eggs, almond milk and coconut oil.
Combine the wet and dry ingredients together.
Coat a non-stick pan with a bit of oil or butter and bake the pancakes on medium heat.
