Steamed Fish
INGREDIENTS
one pound red snapper fillets
half teaspoon salt
half teaspoon ground black pepper
one tablespoon grated fresh ginger
one tablespoon soy sauce
two teaspoons sesame oil
two shiitake mushrooms
one tomato, quartered
half fresh red chile pepper
two sprigs cilantro
PROCESS
Bring about one and half inches of water to boil in a steamer fitted with a basket large enough for the snapper to lie flat. Season snapper with salt and pepper, and place in the steamer basket. Top fish with ginger, and drizzle with soy sauce and sesame oil. Place shiitake mushrooms, tomato, and red chile pepper in the steamer basket.
Steam fish fifteen minutes, or till easily flaked with a fork. Top with cilantro.
