I guess everyone has their own favorite cheesecake that comes in variety flavours.
I have been baking this particular cheesecake for friends and family members. They all agreed it is simply awesome.
This cheesecake is very easy to bake and the ingredients are something that you can find at home most of the time.
Today I am going to share with you the recipe for this cheesecake which I adapated from Allabout.co.jp
Ingredients:
250gcream cheese
50gbutter
100g (I use 60-70g) sugar (I replace with brown sugar】
3 eggs
70ml milk
40g cornstarch
1 tablespoon (I use 1 1/2 tablespoon)lemon juice
Set the oven at 170 Celsius.
- First, measure and leave all ingredients at room temperature.
- Secondly, separate egg yolks and egg whites.
- Leave egg whites in a dry container and put in the refrigerator.
- Mix cream cheese and butter until creamy. Add milk little by little into the mixture until smooth.
- Then pour half of the sugar, egg yolks, corn starch and lemon juice into the mixture. Stir well when you add them everytime.
- Make meringues by using egg whites.
- Remove the egg whites from the refrigerator. Add the remaining sugar into 3 parts. Whisk until the meringues are formed.
They are thick and you can turn them upside down. This indicates they are ready to add into the mixture. - Fold half of the meringues into the mixture. Then continue with the rest.
- Pour the mixture into pan.
- Bake for 40-43 minutes.
- I always leave the baked cheesecake for around 3 hours before transfering into the refrigerator if I plan to eat it the next day.
*Please make sure the container for egg whites is dry and clean.
