Agreed, most psychology is far from simple... your initial statement about binary divisions reminds me of that old truism: "There are two kinds of people in the world-- those who believe there are two kinds of people in the world, and those who don't"
Temperament theory is, of course, a constantly evolving field. Recent studies in neuroscience are helping identify and isolate those parts of brain function that are inherent and genetic vs those which are learned or created by violent or long-term psychological trauma.
Whereas I appreciate the benefits of psycho-pharmaceuticals-- especially as short term remedies while deeper issues are being addressed-- I always (and this is just personal opinion) come back to the reality that I prefer to make myself the best possible version of my authentic self, rather than getting invested in artificially creating an alternative self.
