Recipe for pizza "Black Pearl" commented by chef Artur Khachatryan:

  1. Prepare the dough. For 1 liter of milk - a packet of confectionery yeast (we use good French, they give a special taste), 50 grams of salt, 100 g of sugar, flour - per eye (usually about 1 kg). Now the main feature - we add to the dough ink cuttlefish at the rate of about 10 grams of ink per pizza. In fact, the ink of cuttlefish is quite expensive - a small jar costs more than 2 thousand rubles. Therefore, if you want to save, you can use the usual food color. But pizza will lose much in terms of flavor and flavor. By the way, about the taste: today we are preparing a pizza with boiled pork, but the dough with ink of cuttlefish will perfectly match with seafood. Just keep it in mind.

So, knead a dense elastic dough, put it in a bowl, cover it with a film. When it rises (and this process depends on the temperature of the environment), once again thoroughly mix the dough with your hands. For one pizza we take a piece of dough weighing about 200 g, the rest can be frozen.

  1. Make pizza sauce. We put in it only tomatoes, red basil, garlic, parsley, a little salt and "beat" all the ingredients in the blender.

  2. Filling. We cut the cherry tomatoes in half, the three classic Mozzarella cheese on a large grater (you can buy in the store the usual Mozorellu Belarusian, but we prefer to buy this cheese on the market, with a whole bar), thinly cut the boiled pork - by the way, also our homemade Cooking. An alternative to boiled pork is a carbonate or a brisket.

We roll the dough by moving from the middle to the edges, so that we get beautiful "sides".

We spread the dough on a special pallet-grid, level it, form the edges.

Carefully, but carefully smear the base of pizza sauce, leaving the edges clean by about 1 cm. On average, one pizza takes about 100 g of sauce.

Sprinkle all the grated cheese (the amount depends on your preferences), lay half of the cherry cut down and pieces of boiled pork. Please note: Usually the finished pizza is cut into 8 pieces. Count the stuffing so that every ingredient in the pizza must be on each piece.

  1. Send the pizza to the preheated oven and cook for 5-7 minutes at 300 degrees.

In a café, of course, we use special professional furnaces. Home ovens, as a rule, are not so powerful - they only heat up to 280 degrees. In any case, the home oven should be heated to maximum. It is clear that preparing a homemade pizza will be a couple of minutes or more. When you see that the cheese has "boiled", the pizza is ready!

We get it, put it on a tray, decorate it with fresh arugula and cut it into portions.
