I love green asparagus, I wrote this a million times. I heard that you can make asparagus ice cream! But today I am not going to write about ice cream, but about soup that is so tasty, that was the best dish on Sunday.
The mixture of leek, asparagus, and feta cheese is just incredible! You have to try it. Most of the time I used leek instead of onion, and in this case, when the soup is green, I use both white and green part of the leek.
Making of this soup is maybe 20 minutes long, and you have this big bowl of steaming hot family dish.
Asparagus, leek and feta soup
Ingredients:
- 2 garlic cloves
- 200g of leek both green and white part
- 10g olive oil
- 500g green asparagus
- 800g water
- 1 spoon of a vegetable stock cube
- 1 pinch of nutmeg
- 1 pinch of black pepper
- 100g feta cheese
- Mill the garlic cloves and leek for 5s/speed 5. Scape down the side of the bowl. Add olive oil and cook for 3min/100°C/speed 1.
- Add green asparagus, chop for 5s/speed 5.
- Add water, vegetable stock cube, nutmeg, and pepper and cook for 15min/100°C/speed 2.
- Add feta cheese and blend 1min/speed 10.
- Serve immediately.
If you want to make these soup without an all-in-one cooking device like Thermomix:
Chop garlic and leek put them to saucepan, add olive oil and cook until they are tender. Add chopped asparagus.
Add water, vegetable stock cube, nutmeg, and pepper and cook until all veggies are soft.
Add feta cheese and blend until smooth.
