I used a canon 80D and a sigma 150-600mm contemporary lens.
For the choice of a camera it depends of the budget you have in mind (well...) and also what kind of photography you want to do, for portrait, scenary a full frame might be better (although slightly more expensive), for birding the APS-C format is still considered as better as you want as much reach as possible.
the canon 80D is a good camera with a good autofocus and not too pricey for that matter and can do good video as well (although, I am not too much into video). But if you are on a tighter budget a 700D (and soon the 800D) could probably be enough to start with. (actually there are plenty of option possible also with nikon or sony)
