Man, this looks enticing @gringalicious! The purple potatoes! The co-op by our house always sells bags of purple, white, yellow and orange carrots and I've roasted them in a similar way. @vermillionfox just started a vegetarian diet a few weeks ago. I'm going to suggest this, probably omitting the cod.
