Because it’s Monday and it’s potentially going to be a long week. I don’t think anyone can argue that cookies are a must today, or that a classic like oatmeal cream pies is even better!
I just realized as I am writing this post that I am starting this week without chocolate. What? That is something that must be amended later I'm sure. Don’t worry, I’ll make up for it.
So, in light of these facts I am going to keep today’s post short and sweet because I have a bunch of things to do today. Hopefully you guys don’t mind. I’m pretty sure you’re only here for the food anyway so let’s get to it.
Oatmeal Cream Pie -> These three little words make me very happy, what about you? Unfortunately the real thing isn’t all that it used to be. Little Debbie may be very cute but the unpronounceable ingredients that go into her treats are not. Need I say, yuck?
Here I go again saying how much better it is to make everything homemade, yatta, yatta, yatta. I’m a broken record, I know, but can you argue with that? I just really like knowing what is going into the food we eat and I think everyone should enjoy that same peace of mind.
Okay, I’m not saying these are healthy or anything. They definitely aren’t going to join the power food list anytime soon, but in moderation they are such a yummy alternative to packaged junk foods. Plus, they are so easy to make and everyone loves them. Especially the kiddos. They even really liked them without the frosting and that is totally an option, or you can just frost single cookies.
Grab the kids and get baking this week and then all that’s needed is a big glass of ice cold milk and you’ll be set. Cheers!
ALL CONTENT IS MINE AND ORIGINAL! All of these food photos were taken with my Nikon D5300 and my favorite Lens, the Nikon AF-S FX NIKKOR 50mm f/1.8G. You can find out more in my INTRO POST.
And, by the way, to all the minnows out there, my intro post did a huge $0.21. The key to success on Steemit is to be consistent and persistent.

Ingredients
Cookies:
1 1/4 cups (2 1/2 sticks) butter, softened
1 egg 2 cups packed brown sugar
2 tablespoons maple syrup
1 1/4 teaspoons salt
1 teaspoon vanilla
1 teaspoon baking soda
1/4 teaspoon cinnamon
1/8 teaspoon pumpkin pie spice
3 1/4 cups flour
3 1/2 cups old-fashioned oats
Frosting:
1/4 cup (1/2 stick) butter, melted
4 cups powdered sugar
2 tablespoons milk
1 teaspoon vanilla extract
pinch of salt
Instructions
Preheat oven to 350 degrees F (180 C). Beat butter and brown sugar in a mixing bowl until creamed. Add syrup, egg, vanilla, salt, and spice. Mix in flour then oatmeal. Roll dough into 2 tablespoon sized balls, place evenly apart on parchment lined baking sheet, and flatten slightly with palm.
Bake for 8 - 10 minutes or until edges are golden. Remove and cool completely.
Whisk together ingredients for frosting in a medium bowl until smooth. When cookies are cool, use a knife to spread frosting between sets of 2 to make cream pies.

Thanks so much @trogdor. Yes, things are going very well.
Also, thanks for your piece on 'SMT's for Dummies." Although, I must admit I still have questions. Perhaps it won't be too much longer and those questions will be apparent.
Have a fantastic week!
No problem, glad you liked it! Perhaps we'll see a GringaCoin in the future...? haha
it has entered my mind for sure
Thinking about starting up a steemit-style micro blog on gringalicious.com? You could allow different levels of access for holders of gringacoin, or something like that. If you've got any specific questions I can try to do some digging for you.
Thanks @gringalicious, It's great pleasure to see all of your post.
Love and Peace👦
And to you too @leehyunmin!

They would love that! It's one of their favorites!
Those look so delicious :O I would love to try them ! Also super cute pictures good job :) I love cookies but they have too much sugar in them i gotta change them with something with less sugar like that :))

OMG!! Looks really yummy!!
I appreciate it @crissimoes!

Thank you so much @caminito!
Sungguh lezat

@gringalicious . Hah the joys of hot freshly baked cookies with a warm glass of milk. Your photography brings out the goodness that is cookies.
It's not fair that I just have to see the picture,
I just want one.
😋😋
You must have read my mind. I love Debbie oatmeal pies and my Mom use to give them to us kids as a treat. I think they are made here in Pennsylvania. Anyways, I have on my video recipe to list to make these creme filled oatmeal pies. I'm marking your recipe down. Great photos! Have a wonderful day. Tess
Fantastic commenting, Tess. Keep me informed as to when you do your post on creme pies, I'd love to see it
Wow these pics are amazing. I might come back to this post to give the recipe a whirl. :)

@gringalicious i always look forward to your posts. Your recipes are mouth watering and you have a great talent in taking pictures.
Mmm I'm drooling, looking at these beauties. I've got some cookies planned for later too, and now I'm thinking I'd better make a trip to the grocery store for more butter so I can try these... It's been way too long since I've made any sandwich cookies!
The pictures you take for these cookies are so cool especially the one in the cupboard with a glass of milk its so professional, I can tell in the pictures that the cream is delicious it just looks scrumptious oh my goodness you are going to kill me with your tummy posts but I'm looking forward to your next one because I never know what your going to make next and its exciting!!! Have a great Monday!😊😊
Ha, well it is Blue Monday, officially the year’s most depressing day. You need a batch of these to take the pain away.
Sit with a coffee and binge the whole lot.

Oatmeal Cream Pie Cookies super stunning work :)
Ok, just commented on another post then read this one followed by your Intro post, probably should have read the intro one first! Anyway your blog is great, I enjoy cooking so I might have to give some of them a go (these cookies look pretty awesome! I always like oaty cookies!) but it's the photography that actually drew me to your blog. I write articles aimed at photographers of all levels and so I like to try and see as much variety as I can when it comes to photography. Personally I've only ever done one or two 'food' shoots, and they certainly didn't look as good as these.
For me great food photography is such a skill, and I think what shows in your work is that you're a photographer viewing it through the eyes of a cook. Like this one for example, you've made the cookies look right at home in the environment whilst making them look TASTY at the same time.
I've followed your blog in the hopes I'll learn a thing or two about food photography, and maybe a recipe or two along the way!
