GIVEN TARKARI (SOUP POWDER WITH VEGETABLES)
Ingredients:
200 g peas
2 liters of water
2 tsp. Ground coriander
1 tsp. turmeric (if any)
300 g of peeled and diced vegetables (carrots, cauliflower, cabbage, string beans)
1 tbsp. l. melted butter
2 tsp. seeds cumin
3-4 tomatoes, washed and cut into 8 lobules every
3 tsp. salt
1 tbsp. l. chopped parsley or cilantro.
Cooking method:
Go and rinse the peas, drain the water. Pour 2 liters of water into a pan, put peas, ground coriander, turmeric and put on medium heat. When it boils, remove the foam and leave to simmer on a moderate fire with the lid uncovered for 30 minutes, until the peas become tender. Put the vegetables and cook the soup for another 10 minutes.
Meanwhile, prepare the seasoning. Preheat melted butter over medium heat in a small saucepan with a handle or a ladle. Throw in the hot butter seeds of cumin and fry for 30-40 seconds. Then put the tomatoes and fry, stirring, 4-5 minutes. Pour the seasoning into the soup and season with salt. Stir, remove from heat, cover and leave for a short while, so that the soup is soaked with the aroma of spices. Serve with fresh herbs of parsley or cilantro.
