Hello Dear Witches...!
Today we wake up late at home, is that these last days have been total laziness, the rainy days are ideal to stay in bed, although eventually you have to get up and make some food, this morning I prepared a super fast breakfast, take some canned sardines I had, a couple of tomatoes and onions to make a delicious salad that combines very well with delicious arepas.
I have fallen in love with vegan mayonnaise, made with aquafaba and soya oil (I owe them the recipe), and although I didn't like to put mayonnaise on fresh salads before, with this I dared to put a little, the result was great, also with the touch of spice that should not be missing, it is simply delicious.
This type of salad reminds me a lot of my great-grandfather, he was in charge of taking care of my father's farm, and whenever we went to visit him he received us with a salad similar to this one, he added him chopped cilantro and a lot of spice, he was a country man and he liked the simple food, and this was one of his favorites, accompanied by a delicious arepa cooked on the coals and a good cup of coffee, it was the ideal breakfast for him.

Preparation
Begin chopping the tomatoes, onion and chili to taste, clean the sardines well, removing the backbone and mix with the vegetables, integrate well, to continue adding the dressing. Prepare the dressing mixing mustard with mayonnaise, lemon juice, salt and pepper to taste, beat well until you get an emulsion and add the vegetables with sardines, mix to integrate and ready our salad.
Preparing fresh salads has become one of my last addictions, they are very easy to prepare, they take me out of any culinary trouble, especially when I am distracted doing other things and I have lunch time and I still do not have anything ready, everyone at home loves them, good to My Mathias not yet, and they are also very nutritious and healthy.
With good arepas, or a delicious toasted bread, this salad combines great, even for a light dinner looks great, and you, with what would you accompany this salad?

Unlike me, I only like to eat them at breakfast hahahaha Although in a nice lunch do not fall bad!
This would be perfect right now as it's sooooo hot and humid here! I love light salads, could eat them every day. I still haven't tried sardines, they're on my list to buy. Beautiful lunchtime treat @fmbs25 :)

I've never had sardines in a salad such as this, but must try it sometime! I am not familiar with arepas, but we have a similar item here with a different name. Sounds like a wonderful meal! 😊
The arepas are made from pre-cooked corn flour, salt and water, prepared in frying pans or a hot plate, are really neutral in taste but their companions make it delicious, and this salad is great for you!
I adore kitchen witchery! While I can't say I'm a fan of sardines (I've never tried them), I'd certainly give them a go in this salad! I'm not really a fan of sardines, unless they're delicious fried steaks, but this is an option I like to prepare from time to time, it really gets me out of trouble! I have to create a pinterest to follow you around! I love your work!
