When I make cinnamon buns, I prepare the buns the day before and leave them covered over night. As to break down the phytic acid as much as possible.
Mix all the dry ingredients, the butter and milk in a bowl. Knead the dough until it looks like this:
Flatten the dough, brush on butter and pour on cinnamon and unrefined brown sugar on half.
Cut them in slices with a pizza cutter.
Roll them up like this:
Squeeze them and place on a baking tray. Now I cover them and let them rest over night in room temperature.
Next morning, whip together an egg and brush them and cook them at 225°Celsius for 10-15minutes (I put them in a cold oven, but you have to check them so they don't get burned!) and you'll have:
The result is delicious cinnamon buns I guarantee your kids and/or friends will love! I had too much sugar on mine, so some of it poured on the tray and burned while cooking.
The dough recipe is as follows:
- 550 grams wheat flour
- 3 table spoons of sugar
- half a tea spoon of salt
- half a tea spoon of cardamom
- A tea spoon of dry yeast
- 0.25 liters of milk.
- 100 grams of butter
- 1 Egg
All organic of course ;)
I used about 4 table spoons sugar and 2 table spoons cinnamon to top dress. Next time I'll try 3 table spoons sugar! ;)
