I'm almost certain that's a Vapourer moth Caterpillar. I remember when i was a teen i saw one and was stroking it's back, about 10 minutes later i almost passed out. So don't touch the little cuties :3

Is it eatable?
I don't think any hairy caterpillars are edible, not sure though.
There are a few. Though they tend not to look fluffy like these. I know there is an edible one which has spikes down it's back that are made up of hairs even though they look like solid spines. I would never eat such a cute creature though :3
