I had always thought that honey was honey until relatively recently. When I discovered that most of the stuff that we can buy in the supermarkets are usually blends of many types. As you say different environments produce different flavored honeys. We only buy from local producers now. Luckily we live in the countryside.

I love local honey--I think it tastes so much more spectacular.

I like the way it reflects the local plant life in taste. You can taste the fields :)
