This wet rub consists of paprika, chili powder, black pepper, salt, garlic powder, Coriander, thyme, oregano, basil and olive oil. These ingredients are packed with flavors and are key to what makes these Chicken Leg quarters mouth-watering.
There isnt a specific amount you should use when making the rub. I will list a standard ratio of spices in the recipe. But you can always add more or less of the ingredients that you want. For example in my house we eat a lot of garlic and I love the taste so I always add more garlic. To make the rub you add all the spices in one bowl and mix in the olive oil.
You then wash the chicken with vinegar. You place the chicken in an aluminum tray, pat dry with paper towels and rub the mixture onto the meat.
Make sure to rub the mixture under the skin. This will penetrate into the meat and be super delish!
