I love all Japanese foods. Sushi is my favourite but soba comes in at a close second. Despite it being a very windy winter in Sydney at the moment, we made some cold soba for dinner on Sunday night. Not only is it healthy but its a super quick lunch or dinner solution.
All you need is soba, soba sauce, nori, radish and spring onion.
While the soba was boiling away, I assembled the other ingredients together to make the dipping sauce. The grated radish and chopping spring onion lend a fresh flavour and the bottled sauce is salty but slightly sweet.
Once the soba was cooked, I washed it in icy water to keep it chewy then served it immediately with some nori sprinkled on top.
I also like to add some wasabi to the sauce for an extra kick but forgot on this instance.
Mr K and I slurped it all up and even made a second batch. Safe to say this is a favourite!
