Omg I struggle with this too. My interests are so diverse and there's never enough time in the day to do everything I want to. But I also know I struggle with just not wasting time on things that don't matter.

You just have to work out a plan, it will enable you know where each of your interest falls and you will start building and prevent you from wasting time on things that does not matter.
