CLASSIC HOME-MADE TOMATO AND BASIL SAUCE

Great tasting and all from scratch, you can use this in your favourite pastas and gnocchi.

Ingredients

  • 2kg of tomatoes
  • 1 large onion (loosely sliced and chopped)
  • 4-5 cloves of garlic (sliced or chopped)
  • 2 bunches of basil (picked), about double whats in the picture below
  • double pinch flake sea salt
  • 2 tablespoons Extra virgin olive oil

The Methedology

1 - cut a cross in the tomato skin.
2 - soak the tomatoes in boiled water for 5-8 minutes, place a plate to stop from floating.

3 - Drain the tomatoes, and peel the skin off.
4 - squeeze gently (careful of backfire) the tomatoes into bowl.

5 - Dice the rest of the tomato after the squeeze.

6 - Sweat the diced garlic and onion in a pot for about 5-7min on med heat.
7 - Add the tomatoes to the pot and stir.

8 - Add salt, stir and cook for about 20 min.

9 - Add the basil to the mix and stir in for 2-3 minutes.

You're ready to go with your favourite pasta and gnocchi.

Ahhh, I bet this would be a delicious soup if you used an immersible hand blender. Perfect for a comfy food on a cool autumn day. Nice and thick!

Yeah I did wonder whether I could turn this into a soup, the immersible hand blender sounds like a great idea, might have to give that a try

that looks really good! ive been making lots of tomato and basil soup recently, soo good and so easy :)

that if you haven't got fresh tomatoes you can use canned tomatoes and tomato puree, and its just as good, i was surprised how good! for soup you can add a few red lentils to add substance, and add basil right at the end. And if you like chilli, just a few flakes gives it a lovely warmth :)
