Coconut milk, 400 ml
Sugar, 130 g
Grated coconut, 100g
Liquid caramel, 8 tablespoons
For a rectangular mold of 25×12 cm and 1.3 liters of capacity

We are going to cook the easy coconut flan in a bain-marie in the oven, so we will start by putting a tray or dish larger than the mold that we are going to use for the flan in the oven with about 3 cm of hot water and preheating the oven at 180ºC.
To tell the truth, preparing this flan is not difficult at all. Beat the eggs well, add the grated coconut and sugar. Mix well until a kind of paste remains.

We shake the coconut milk very well, and we add it little by little to the mixture while we integrate it with the rods. Pour the liquid caramel into the mold and rotate it so that the walls are well coated. Add our milk mixture. Cover with aluminum foil, sealing the edges well, place in the bain-marie that we have in the oven and leave it for at least one hour at 180ºC. After that time, we lift the paper being careful not to burn ourselves, we prick it with a toothpick and if it comes out clean we can remove it from the oven, if it is not set yet, we leave it for 15 more minutes. It is better that we spend a little time than that we fall short. For your peace of mind I will tell you that once my mobile battery ran out, the timer did not go off and I remembered that the flan was in the oven about two hours later, I thought we had run out of dessert, but no , it was great.

Let cool without removing the aluminum foil and store in the fridge for at least 8 hours.
