Sticky mango rice (Khao Niao Mamuang)

With this recipe, I'll kill two birds with one stone! I "Cuisine pour la Paix", with Sophie, for the Thai National Day, and I participate in Stéphane's Avent Gourmand calendar, always with Sophie who makes us a "tmya kûng" but also with Catalina, of the "blog de Cata", who had the very good idea to train us in this Thai New Year's Eve and who proposes us a "khao phase sapparod".

Ingredients for 4 vagrants:
200 g sticky rice - 30 cl coconut milk - 4 tablespoons brown sugar - 1 vanilla pod - 1 pinch of salt - 1 nice mango -
1 banana leaf

**Preparation: **

  • The day before, rinse the rice and soak it in a large volume of water for 12 hours.
  • Drain well
  • Boil coconut milk gently with sugar, salt and vanilla bean split in half and scraped off.
  • Add rice and cook gently for 7 minutes.
  • Remove the vanilla bean, pour into a strainer and collect the coconut milk.
  • Cut 4 20 cm squares in the banana leaf
  • Place rice in the centre and bring back the sides to form a package.
  • Keep closed with a tooth treatment if necessary
  • Place in a steam basket and steam for 45 minutes.

  • Meanwhile, peel the mango and dice it.
  • Serve warm or cold rice, with mango and the rest of sweetened coconut milk.
