India comprises many nations, many cultures, many native religions and many languages. Therefore, there are many cuisines.
Given the enormous variety, it would be impossible to claim any particular dishes as "favorite dishes". Indian Airlines and Indian Railways, though, do force some unpalatable food down everybody's throat and this would probably be India's most widely consumed dishes. But I have mention some of most favorite dishes of most Indians.
Paneer Butter masala is one of the delicacies of Indian cuisine. Indian cuisine has a rich tradition of many distinct ways of cooking. The cuisine is characterized by abundance of dairy products in form of cottage cheese (malai), curd (dahi) and cottage cheese (paneer).The food is simply delicious and may be one of the most popular cuisine of India. Indian foods are popular not only in India but its flavor and aroma has spread all over world. People from different part of world have started relishing Indian food.
Paneer butter Masala is one of the most popular curries, which is served in all restaurants and occasions. It is usually served with Plain Nan, Lehsunia Nan or Lachcha Paratha.
Thick gravy is prepared with fried onion and cashew-nuts in butter. As the name suggests "Makhani" means Makhkhan or Butter is an important ingredient of this curry. Traditionally a good amount of butter is used for the recipe but I have reduced the quantity as now day's people are health conscious and prefer to use less fat. Tomato puree and little sugar are added to the gravy, which gives little sweetness and little tangy taste to the dish. Fresh cream is added to the gravy which makes it fabulous. I strongly recommend to use fresh paneer (cottage cheese) to the dish to get the actual taste.
Tandoori Murgi is another pride of Indian cuisine and has managed to impress people all over the world. This popular dish originated during the Mughal era and thus has Mughlai roots. It consists of roasted chicken marinated in yogurt (dahi), lemon juice (nimboo ka ras) and zingy hot spices. It is named after the type of cylindrical clay oven, tandoor, in which the dish is prepared traditionally. It is heated using charcoal and wood, giving it a nice smoky flavor. For the chicken marinade, start with the lemon juice, by carefully rubbing it into the multiple cuts of chicken. It is allowed to rest for a while, after which the other elements of the marinade are also combined and spread over the chicken chunks. I have added a few drops of orange food coloring to the dish to obtain a vibrant hue. The spices in the marinade can be added according to taste. Keep in mind that proper marination is the key to get juicy, delicious chicken. So it should be allowed to rest for at least 8–10 hours, so that the flavors are well-soaked by the pieces. These chicken pieces are cooked in the microwave for a few minutes, followed by grilling on both sides. We get soft, succulent and perfectly golden Tandoori Murgi.
It can be served with onion rings, lemon wedges and green chutney. This dish will give you a taste of Punjab, and will positively blow your mind.
