Easy, Breezy, Baked Chicken with the Fixins

I pride myself on being a great cook like the majority of us do. I love, love, love chicken. Since I have been more health conscious lately, I had to put down the flour and Vitamin G (grease) and pick up some kind of healthy oil and preset an oven to 375°. Phew!!! A lot of work, right? Absolutely not!!!

I love to cook and sleep...starting at 6, 7 in the morning, going back to bed, then waking up to a home cooked meal that is ready to eat by 12 noon or 1,2 in the afternoon. Let me show you how...

As I stated earlier, preset your oven to 375°. Leg quarters are the best chicken to purchase. They are easy to clean and you get more for your buck when you purchase a bag. Once you thoroughly wash and remove the excess fat from the quarters, rub them with olive oil. Place in a bowl.

Pour 2 tablespoons of garlic powder, sea salt, coarse black pepper, onion powder, and 1 tablespoon of Hot! Slap Yo' Mama into the same bowl as the chicken leg quarters. Mix and tumble (yes, I stated tumble!) the quarters and the seasoning until the quarters are coated in it. Place in a deep baking dish. Slowly add less than an inch of water to the baking dish, then bake for an hour. After you get a good crispy skin on the chicken, reserve all of the liquid and fat that accumulates from the baking. Place it in a good ziplock bag and freeze for future use (I will let you know when, dear friends). By the way, you'll be surprised at how crispy the skin of the chicken will be!
