Sometimes we reading a review about delicious food, and then interesting how about taste by ourself. We found special dishes, a traditional food in form a Chicken Soup called Soto. Or some people call it Sroto.
But, how about we dont have time to buy and want to practice make Chicken Soup "Soto" by our self.

1. The materials needed are easy to obtain
Ground spices:
- 1 turmeric segment
- 1 segment of ginger
- 1 tip of the galangal thumb
- 4 small size hazelnut seeds
- A pinch of cumin
- 1 teaspoon of coriander
- 2-3 lemongrass stems
- 1 teaspoon of pepper
- 2 tablespoons of salt
- 3 cloves of shallot
- 2 cloves of garlic
- 2 tablespoons of cooking oil
- Enough water
Additional seasonings:
- 3 pieces of orange leaf
- 2 lemongrass stems
- 2 bay leaves
- 1 leek, finely sliced
Stuffing:
- 2 liters of water
- 1 native chicken
- 200 grams of cabbage, thinly sliced
- 200 grams of bean sprouts
Supplementary material:
- Koya powder
- 50 grams of glass noodles, soak them in hot water
- 3 boiled chicken eggs, sliced into 4 parts
- 1 lime fruit
- 1 bunch of celery, chopped
2. How to make it not as difficult as you imagine
- Put all the spices in the blender. Then saute on a frying pan over medium heat. Even though there is oil in the spices, you can add more oil to taste.
- While sautéing, add orange leaves, bay leaves, lemongrass and galangal. Saute until the spices are fragrant and somewhat dry, then turn off the heat.
- Separately, boil the water in a saucepan until it boils, then add the sauteed spices. Taste the sauce, adjust the taste by adding sugar and salt. If it is right, add the chicken meat and boil until the meat is cooked and the seasoning is soaking.
- Add the leeks and boil again until it boils.
- Next, remove the chicken from the pan, chop until the meat and bones are separate. Put the pieces of meat back in the pan.
- Prepare a serving bowl, add vermicelli, celery, and cabbage. Flush with soto sauce and squeeze the lime to taste. Finally, add boiled eggs, koya powder, and a sprinkling of fried onions. Chicken soup is ready to eat.
3. Tips that can be applied
- You can smooth the seasoning with a blender, mash, or ulekan. Many people say that when smoothing herbs with an ulekan the results will be more fragrant and taste spices
- If you use a food processor, you don't need to add AI, just enough oil. The less water content in seasonings, the better the results.
- Sauteing is an important step and needs attention. If the seasoning is not yet fully cooked, the taste will be a little unpleasant alias feels rather raw. One indicator of when to stop sautéing is when the seasoning has started to turn a little dark and there is a stick on the bottom of the pan.
