Hey there! I love playing 'kitchen scientist' and this week I made a gingerbug soda!
What is a gingerbug soda? A Gingerbug soda is a fermented soda brewed using a gingerbug starter. And what is a gingerbug starter you may ask?
I covered that last week in part 1 of "How to make a Ginger Bug.".

Alright so let's get into it now.
Ingredients
- 4 cups fruit juice or brewed tea
- 6 tablespoons of organic white sugar
- 1/4 ginger bug starter (liquid only)
I went with chai tea this time.
Little brewing trick: when using multiple tea bags, tie the bags together and snip off the tags. That way you can completely submerge all the bags and when the tea is done brewing, you can easily retrieve all the tea bags instead of having to fish around for them.
Instructions
Add your sugar and tea into the boiling water.
Allow time for your tea to cool down to room temperature or slightly warmer before mixing your ingredients together.
Add in your tea
Now the starter
Put some breathable material over the neck of the jar ( This coffee filter works great!) Store in a warm place out of direct sunlight.
Here the jar will stay to ferment for 3 days. (Stirring once a day.)
If the brew is active, you will see bubbles building up on the surface.
And a fizzy freakout after a little stir.
After day 3 it's time to bottle this beauty!
Be sure to taste before you bottle, you may need to add some more sugar first.
Place the bottle in a spot out of direct sunlight for about 3 days. You can give it a few more days if needed, but be careful not to leave it too long, or your soda will take on a more alcoholic flavour.
If you are using a swing top bottle, you will want to burp the bottle once a day.
Pop the top slowly and be sure to do this over the sink.
After 3 days you can place the bottle in the fridge to chill before serving.
Drink within a few weeks.
Don't forget about your brew, it has been known to explode if left for long enough.
It's perfect! My wife doesn't like chai but says this ginger chai soda brew blends nicely.
That's it! We have delicious (probiotic rich) fermented soda to drink!
Organic, natural soda that helps the gut rather than hurt it, like conventional chemical sodas do.
