This is a good example of knowing your market. We live in a very rural area and could never do this here simply because there are not enough restaurants of this type in our area. Recognizing your realistic market potential is important.

Absolutely. That is probably the most important thing to understand before starting out. Microgreens are probably not the best crop for your area, but maybe something like eggs, berries, potatoes, or even a niche like meat rabbits might go over well.
