You've convinced me, I absolutely need to grow some of these! I have a few questions, have you noticed whether or not honey bees like the flowers? Internal questions: I wonder if they're like sunflowers where the whole plant is edible? If so, even more food resource! I also wonder if livestock would like them?? Have you thrown some to your cows at all? I read in another comment that their cows love them!
With the other person posting that they have the wrong variety, I am worried about which kind to buy! I also wasn't aware of the different varieties! Yikes

We only get flowers on them when we have a longer season, We have feed the plants to the goats when i was a kid. I only know of two varieties. The tubers are different colours but i think that is it.
