Self-Sufficiency
Last week @beatitudes8 and @shalomacres along with others friends, got together to butcher a steer. If you havent seen the post please check it out -----> Butchering a Cow with @shalomacres.
After we completed the butchering process and had all the ground meat grind up we decided to start making @shalomacres famous summer sausage.
We used beef, venison and lamb for the sausage, and lots of it.

We used around 150 LBS of venison, 100 LBS of beef and 50 LBS of lamb.
We used 2.5lbs casings and filled them to about 3.5lbs. @shalomacres had an awesome pneumatic stuffer that worked great.
Altogether we made about 280lbs or so of the 2.5 casings and around 20lbs of the "little smokies" (kinda like a large slim-jim).
As we were filling the casings the boys went out and hung them in the smoker.

I think it looks disgusting to make sausage.. But the end result is soooo delicious haha!
Well its raw meat to start with. Not real appetizing looking but yes the end result is amazing.

He is a summer sausage fiend! That boy could sit down and eat an entire sausage all to himself in a day... umm, actually he has!
LOL I don't blame him its delicious stuff especially with some Swiss cheese.
Mmmm... I'm more of an extra sharp cheddar gal!!

That's really interesting. Every year for Christmas we get summer sausages as a holiday treat and eat slices of it on crackers with cheese. I never thought much about what goes into making it. Pretty awesome you make your own. I bet it is amazing fresh.

After smoking it @shalomacres puts it in his root cellar for 2 to 3 mouths to let it cure properly. Then its time to eat! Yes it is delicious.
