Just a quick post about the apricot trees...picked the first five apricots ready to harvest! Well, I picked two more before that to taste test, and well, let's say they are ready to start harvesting!
Here are a few tips about what to look for when harvesting apricots:
Look for apricots that have all orange and red colors...don't pick anything that is still green, it is not ready to pick just yet!
Feel the fruit...if it is still ferm, it is not ready. If it is too mushy, it is over ripe. Find a nice balance feel to them and that is where you want them to be.
Taste the apricots...if they taste kind on tangy, not ready. They shouldn't be hard to bite into, they should be pretty easy to bite and have a natural refreshing apricot taste to them. If biting into them and mush kind of explodes out, they are past ripe.
And finally...watch for the birds! They will let you know when the fruit is getting ripe. They tend to start eating on them when it is time!

Take the over ripe mushy ones and make wine with them. :-)
I'm not a wine drinker, but maybe make some sort of flavoring out of them?? Interesting thought....syrup maybe??
