Well, If you haven't seen my first post then a little back story........ trying to start a rabbitry to sell to restaurants.
See I said "a little", now your caught up.
I have heard back from the FDA and found out that I just have to register with them and allow inspection of my butchering area.
The inspection will be random and I have to comply with all the necessary regulations, but it looks good so far.
I have been doing some research into restaurants in my area that serve Rabbit dishes and was surprised to find more than I thought I would.
Next step as I see it is to contact them and see if there is any interest in using "Local" "Farm to Table" products and practices.
I could be in production within 3 months.
Wish me luck........ I think I may need it. ;)
