How to prepare Afang soup( A Nigeria delicacy)

OK, I decided to write about afang soup because it's what i prepared for the new year which i shared for both family, friends and neighbors, the praises they all sang about how delicious the food was made me wants to share with my hive family about the soup who knows soneone out there will want to give it a try.😋😋😋
Let's dive in; Afang soup is made by combining two fresh vegetable soup to make this delicious Nigerian delicacy. the soup is mostly common to the cross rivers and akwa ibom states but are now mostly eaten allover Nigeria. The soup is very nutritious, rich in vitamins and fibers.
INGREDIENTS YOU WILL BE NEEDING
Freshly washed water leaves
Ukazi(afang leave grounded)
Goat meat( you can use any beef of your choice)
Dry fish and stockfish
Crayfish
Periwinkles(optional)
Palm oil
Salt, pepper and spices to taste
PREPARATION OF AFANG SOUP
Properly wash the waterleaves and allow to drain,do the same to the periwinkle using hot water and salt you can skip the periwinkle because its a lot of work to wash it clean but thats the fun of the soup😁.
STEP 1
parboiling the meat with all the ingredients (seasoning cubes,sliced onions and salt.)

STEP 2
Soak the dried fish with warm water, remove the center bones and wash thoroughly with just water; also wash the stockfish with warm water.

STEP 3
so what I do here is place your pot on the fire and a little red oil when its hot, pour your sliced onions and crayfish to fry a little on low heat, it Gives your soup this sweet aroma, then add the washed water leaves stir and allow to simmer for about two minutes.

STEP 4
add your meat, fish and Periwinkle then Add seasoning cubes and salt to taste, allow to cook for 3 minutes.

STEP 5
Add the ground ukazi and the remaining crayfish, and oil to you desired taste, mind you the soup takes a lot of red oil, Stir all together, cover the pot and allow to simmer for another 5 minutes, stirring every 2 minutes.

Viola you afang soup is ready, it can be served with fufu, Eba, semo, pounded yam which ever you prefer.
