Re the AppStore, I wouldn't bother too much trying to get things done for them. It's very likely they'll find something else after you fix the backend, as they inherently don't like crypto apps. I'd push the Android app and try to gain as much traction for it as possible.
Unfortunately, you'll likely have to get used to your iOS app differing from your Android version long-term, as some things that you want to have will not make it through the AppStore certification.

There's nothing that can be done, really. That's the downside of being exposed to the rules of a monopoly. From a "business" perspective, you have to decide if you want to invest into making a product for that platform, given that you might struggle with their rule enforcement.
