How often do veggies boom in the winter?

I think most of us would agree with me that that in winter its not the best time to get the best vegetables.

the weather here is kindda harsh during this time in this part of the world , i mean the sun becomes so hot and the weather is very harsh, infact if care is not taken, before day breaks, the veggies might have been withered and paralyzed due to the heat.

It becomes so difficult for plants to survive in this harsh weather, perhaps thats how it is in other continents

I almost forgot to add that i have pumpkin leafs, lagos/african spinach and jute malow all in the garden.
