Start with the Apples:
1 tablespoon light brown sugar
1 teaspoon cinnamon
Apple Spice Cake:
2 cups all-purpose flour
2 teaspoon baking powder
3/4 teaspoon salt
1 1/2 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
1 cup vegetable oil
1/2 cup light brown sugar, packed
1 cup sugar
3 large eggs, room temperature
1 teaspoon vanilla
Caramel:
1 cup granulated sugar
1/4 cup water
150 ml heavy cream, room temperature
1/2 cup unsalted butter, room temperature
Caramel Swiss Meringue Buttercream:
3 large egg whites
1 cup granulated sugar
1 cup unsalted butter, cubed, room temperature
1/2 cup caramel
For the Spicecake
In a medium bowl, combine flour, baking powder, spices, and salt. Set aside.
With a stand mixer, combine vegetable oil and sugars. Beat until well combined, about 2 minutes. Add eggs, one at a time, fully incorporating after each addition. Add vanilla.
Add flour mixture in 3 parts. Fold in apples.
Spread batter evenly into prepared pans and bake for 45-50 mins or until a toothpick inserted into the center comes out mostly clean.
Place cakes on wire rack to cool for 10mins then turn out onto wire rack to cool completely.
For the Caramel
Cook until desired color of caramel is reached (amber) and immediately remove from heat. Very slowly pour in heavy cream while whisking quickly. The mixture will bubble up (a lot) and boil. Add butter, return to heat, and bring back to a boil. Cook for 2 minutes whisking constantly.
Remove from heat and let cool to room temperature. Transfer to a container and place in fridge to thicken.
Caramel Swiss Meringue Buttercream:
Place bowl over hot water bath on stove, whisk constantly until the mixture reads 160F on a candy thermometer and is no longer grainy to the touch, about 3 minutes.
Place bowl on your stand mixer and whip on med-high until the meringue is stiff and cooled, bowl is no longer warm to the touch, about 5 minutes.
Switch to paddle attachment. Slowly add cubed butter, mix until smooth.
Add cooled caramel and whip until smooth
The Assembly!
Frost and smooth the outside with a thin crumb coat. Chill for 20mins.
Using a small spoon, place dollops of caramel around the top edges of the cooled cake, allowing some to drip down. Fill in the top of the cake with more caramel and spread evenly.

I could enjoy polishing of about half that cake even without the frosting!!! Sometimes the extra sugars are too sweet for me!

Shhhh! You just want to see if I can cook, am I right? I only cook with a recipe. Without a recipe, I am hopeless and I am pretty sure that not even the dog would eat it. Maybe, but, he would have to be super hungry and maybe a little blind.
This cake was actually pretty good and honestly, it was the smaller pans that made the difference in how elegant it turned out. It was taller, sleeker, and well dressed. Boom. Elegant. :)

The finished cake looked delicious and I must admit very professional. too much sugar is a turn off for me too Denise but I agree there are occasions when the recipe needs to be followed and all the sugar is put in.

Thank you so much and believe me, when I say this oh, it is anything but professional. But I love that you think so. It was fun making and my first try was a little bit more caramel in pools than this time. So I think there's a little bit of a learning curve there for me. Practice makes perfect in I think the third time may be a charms! I am not much of a sugar person oh, it's a matter of fact I don't even have it in my house unless I am cooking. I have just never had a real sweet tooth but occasionally I will find something that tastes good.
I do love the Christmas countdown, more for me than anybody else because it shows me how much time I have to mail out my packages. The ones here in the states are not too bad and nowadays it is not too bad sending it overseas, but there are times when it's hazardous, like last year. I have not really given the season much thinking, but as I say that oh, I live with Christmas in my heart all year long. Now that might be a little scary. I blame it on my elf heritage. LOL

I never saw the inside of a commissary. It looks like a typical high-end market. Since they're on military bases, I expected a "no frills" look, more like Walmart than Harris Teeter! 😂
Thank you so much for those kind words! I think the next try will be just a little bit better because it seems to get a little bit more like it should on each try. I think it's because of all the things going on in the cake, either that or I'm just not very organized. Although it looks like it was a lot of work making it, the first time was a little bit more than I bargained for but the second time was way easier because I knew what to expect. Yes! On birthdays there is no limit to what you may have. I tell them that the sky is the limit. One of these days I'm going to eat my words.
The commissaries are all different and some on a little tiny base like Pope Air Force Base was, in Fayetteville, was no more than a big corner store because of course, you had Fort Bragg right outside the gate to shop at. With all the base closings and the combining of forces, they have made bigger commissaries and fewer of them. Most are very typical of a high-end Market, where, as they used to be no-frills because the base supported them, over the years it has changed, and now they need to be self-supporting and use local sources. Harris Teeter rocks! That's the store that's closest to me. I had no idea until I looked today for some reason but Harris Teeter is wholly owned by Kroger's! Who knew? I go pretty much by the recipe as I am not all that creative. :) But, I can say that using those smaller cake rounds really made all the difference in the world. It makes it look more elegant with the three layers and it is smaller, so the cake doesn't sit around all week, waiting to be eaten! I have a couple of good apple cakes. We do love our apples here!

It was three layers! I think it made it look more exotic that way or exotic is promptly the wrong word, but it definitely made it look a lot cooler. The Warriors are not very hard to do oh, just more labor-intensive. Given the fact that you were so handy in many other things, doing a layer cake would be a walk in the park. I think you should try it. And then of course I think you should video it so that we can all watch.

Of course we’re not getting old that can nit be the case I say unconvincingly lol
I will tell you a secret. The cake is a little dangerous because it actually tastes pretty good despite all of the sweet ingredients that go into it. I don't eat any sugar and I had a small slice and it was pretty good, but I found myself wanting another one, and my red flag of warning went up! So, in fact you are probably right and there is nothing about this that is good for any diet. Self-imposed or not. Of course we're not getting old! Just keep on telling yourself that. Stop listening to those old bones telling you stories. If they don't shut up soon, I would threaten to buy a new set. LOL I don't know about you, but this morning was cooler than it's been all year! It's still in the seventies but tomorrow will be in the 80s.
Lol the bones get louder and louder each year I think some need replacing lol

Cake! It had your name written all over it! I actually could see you doing something like this for your family on one of the holidays. You're always doing some fancy Dancy little edible for your Shing dings! The caramel oozing down the sides used a little bit too much on the first one that I did and the next time I had to be a little more restraining. I have to admit that even though the first one was a little messier, it didn't take away from the deliciousness of the caramel. Thank you so much, my friend, you always leave such kind comments.

That was very interesting to see about how to make cake, the superstore is beautiful with lots of vegetables and fruits. Last week i was so much busy that forget to take preparation for market Friday and two exam in a single day also distract from here. Every day is someone's birthday, so you could theoretically have cake every single day :)
You have to understand that wanting cake is once in a blue moon. I never want cake and so when I do and it's someone's birthday, that's a score for me! You are right in saying that every day it's probably somebody's birthday and theoretically oh, I could make and eat a cake every single day. I will warn you that if that happens oh, somebody will be carrying me around in a wheelbarrow because I will have gained at least a hundred pounds. Thank you so much @sofs-su! I will take that as a compliment! I don't really like sweet things as a general rule, but, this had a candy apple sort of reminder. I am sure that I will make it again and again. The family really liked it and it did not site idle for very long.
Another thing I liked about it was I used smaller pans and the cake was taller. It was kind of different and cool. I don't think it would be as fun with larger pans.

yes, during the "pandemic" - our health is the only helper to fight any kind of flu - less sugar, more Vitamin C and D and you can forget about vaccination :-)

Cheese! Cinnamon and Honey are great. I find I am a savory eater. I don't eat sugar honestly. I have never, even as a kid. I don't even have it in my house unless I am baking for the family.
Spoiler alert: I have another recipe for Sunday per request. I take C and D every day. :) If people only knew that most illnesses are from lack of vitamins.
