It's impressive to see how well you know mushroom species. I think it is vital to know them in a place with so many mushrooms.
The scenery is beautiful where you walk and pick the mushrooms. I like chanterelles too because I live in a big city and I have to buy them from the supermarket. I've never eaten them as a garnish for schnitzel, so thanks for the suggestion. I wish you a pleasant, beautiful summer (with less rain I would say, but I don't know if that's what you want!)
Unfortunately, you never know how old the mushrooms from the supermarket are. Chanterelles go perfectly with schnitzel ;-)
My father taught me the basics of mushroom picking. I am constantly trying to educate myself further. My knowledge is probably already above average. But compared to a professional mushroom expert, I know absolutely nothing ;-)
You are right. You can't compare the taste of a freshly picked mushroom with the ones in the supermarket. We can't be experts in everything, I, for example, am not an expert in anything... and I don't mind. If you know mushrooms well and can eat them without worry I think that's enough. I know 2-3 mushrooms and if I had to go mushroom picking, I would ignore all the others.
