Cooking Pork Adobo for my French Family

Last Friday, my husband requested we have pork adobo for dinner. I immediately went to the kitchen, cleaned the table, and loaded the dishes machine. My husband woke up and I asked for help for with the pork adobo.

I cut the pork. He started cooking the pork with cooking oil. I chopped the garlic and onions.

When he finished, I continued everything. He set aside the pork, I put on the garlic and onions using the same oil from the pork adobo. Cooked the garlic and onions for 5 minutes.

I prepared the soy sauce, vinegar, and limonade. Limonade is the Sprite version here in Breizh.

When the garlic and onions are well stirred, stir in the pork until it is cooked again with the garlic and onions.

I don't use measuring cups so I estimate. I pour about 4 spoons of soy sauce. Stir again, and pour 4-5 spoons of vinegar. Make sure it is according to your taste. I added a little pepper as well. No need to put salt as the soy sauce and vinegar are already tasty. I added laurel leaves.

After the laurel leaves, I added one cup of limonade or sprite. If you want more sauce, add more sprite, soy sauce, and vinegar according to your taste.

We use an electric stove, from 6 we turned it to 1 so it is cooking in a minimal heat. It is actually cooked.

My husband prepared the rice. He doesn't like the way I prepared it the Filipino way.

For your information, we only cook this once a month. My husband first tasted pork adobo in El Nido, Palawan when I let him experience eating in a local eatery or a local restaurant. He loves it even when it is oily and there is a fatty area. He never eats that but only the pork meat.

He always opens the windows and doors of our house because the smells remain like it is a Chinese restaurant. He doesn't want the smell stays in our clothes.

Anyway, Alexandre always loves my pork adobo. I remember the first time he eat that, he was already a year old and even eat it by hand.

Elise can eat meat now so I find it funny when she eats more pork adobo than Alexandre.

I love it when I see my kids having a good time eating Filipino pork adobo.

Fred already ate almost everything inside the cooking plate. He eats a lot and I do as well. Again, he never eats the fat part of the pork. I used to eat that in Cebu because Filipinos love to eat everything in pork meat.

But my husband said it is very unhealthy. Later on, I dislike eating the fat.

The purpose of retaining the fat is for cooking purposes. There's oil in the fat part and I just let its oil be cooked by itself.

What I realize also that Filipinos love to cook everything with oil and the basics of cooking are to stir garlic and onions then put soy sauce and vinegar to add taste.

Here is Alexandre when he was about one year old eating his first pork adobo. He was eating alone and eating by hand. It was funny how he flexed his mouth, an indication that he really enjoyed eating the pork adobo I cooked for the family. Of course, as a new mom who never cooks a lot, it is an achievement for me.

I like how he was just being cute and all of that. So innocent. I just want to eat your pork adobo, mama!

And the next 4 photos you see below are from when he turned 2 years old. This time, he is more capable to eat alone using his own plate and spoon. Look how he grabbed some rice alone for his plate. Excuse me for the mess he made on the table but I just let him eat by himself and took some photos for memories.

Flexing his inner Filipino by eating a lot of rice. Oh well, rice is life, isn't it, anak? Hahaha!

As much as I want to but too much oily food is unhealthy here in France. It's not really good to eat this a lot during the cold times here. I'm actually gaining weight. Unlike in the Philippines, it was cool to eat a lot but not gain so much weight. Hehe!

I get that we who have winter weather have to hibernate some in the winter, haha

Pork adobo is like a soul food~ It's easy to cook and everybody loves it. I don't eat the fat part too. Actually, I tend to choose meats with little fat for my adobo, but true, fat adds to the flavor.

I find there's a difference with the fat part in the PH compared to here in France. I can still remember how soft and melting the part of the tambok sa baboy sa Cebu. Haha! Pero dinhi kay bidli na. Lami pa kaayo ta modaginot sa tambok if pobre ta kay gutom kaayo.

Limpyo man dinhi but i think it's the cold weather that makes it BIDLI. hahaha! kana bitaw ang fat murag mo solid sya.

As for cooking naman, may mama will always spoil us good and delicious foods talaga na sobrang nakakabusog din. Sana nga lang at matutunan ko mga recipes niya.

Same with my mother when she was alive. Too bad I never got the chance to learn from her recipes coz I was never a fan to be in the kitchen. Too late to realize.

Wow! everybody loves pork adobo. It is one of my favorite dishes.
I agree with you, heheheh.it is unhealthy to eat the fatty part of but we just need to eat it in moderation.

I like adobo too but I prefer Chicken adobo with boiled eggs. Hehe 🥰 Napakaganda magbasa ng mga ganito yung naeenjoy ng mga Foreigners ang pagkaing pinoy!
