My #midnightletters tend to be about #midnightsnacks. It's late, about 1:45 AM, and I am awake, so therefore I eat. I made pierogis again as part of dinner after finally publishing a long-overdue post with pictures from a couple weeks ago, but the snack was leftovers from a day ago.

I made calzones with dairy-free cheese substitute, hot Italian sausage, and tomato sauce blended with assorted herbs and spices. I also diced up a tomato that was getting close to over-ripe. It added some authentic fresh flavor. Unfortunately, it also made the sauce too runny. They leaked. It tastes fine anyway.
Do you eat leftovers as a midnight snack? Have you made any meals from scratch due to health concerns or just because it tastes better?
I'm going outside to see whether the aurora borealis is visible. Light pollution has thwarted past events.

If I am awake too long during the night, I inevitably get hungry. But I want to eat something that's very easy to prepare, and preferably not too loud and crunchy. Heating leftovers won't likely happen.
Midnight snacks? Down with that sort of thing!
I cook everything from scratch, mostly from homegrown produce, not only because it tastes better but because I trust no one:)
It's funny to have run across this post today. I was in bed at 3am this morning, wide awake, when I thought to myself "it's a good thing I never get up to eat at this hour." I know folks who do. One friend has to put sweets in the garbage and douse them with dish soap to stop her from getting up in the middle of the night to eat them.

I do not think I have ever eaten anything late at night. I spend a lot of late night hours awake, but not hungry. My daughter was telling me that she has been waking up late at night and eating. She just started this. I told her maybe she should eat something before going to bed.
i've never had dairy-free cheese substitute. I would have thought it wouldn't be very good. are you lactose intolerant ?
It's not just the lactose, and cheese substitutes suck as a standalone snack, but nowadays there are decent options for pizza, burgers and sandwiches.
I accidentally bought a vegan mozzerella from the supermarket about a year ago because I hate shopping and I was in a hurry. It might have been good mixed with something but I eat mozzarella just on its own a snack and it was pretty damn gross like that. I threw it out before I could experiment with it.
It used to be even worse. Over the past decade, major improvements have occurred. But if vegans try to tell you it's "just as good," it's only because they have forgotten the real thing, or they're delusional.
That's funny. I don't know many vego-people but they don't try to make this claim. I kind of respect their reasons for doing what they do also.
