My Nani’s (Grandmother) Gajar ka halwa which is made with jaggery is the perfect way to start this COLD year, without feeling guilty about binging on too many sweets! (Especially if this years resolution is about loosing weight 😂)
For the Halwa you'll need;
- 2 medium sized red carrots grated
- 3/4 cup of water
- Cover and simmer it for 7 minutes until soft
- 1/4 tsp of cardamom powder
- 4-5 strands of saffron
- 1/2 cup of milk of your choice
- Let that simmer for 7-10 minutes
- Mash it down well while mixing.
- 1/2 cup of jaggery
- 1 tsp of ghee (or more 😉)
Mash it well with the back of your spatula and once it's cooked and the milk has evaporated, add in almonds and raisins (I've used the ones send over by the lovely people from Conscious Food India)
Serve it warm (tasted best with vanilla ice cream 😤)
