Tauco is a cooking spice that is often used to make green chili sauce. Tauco is the result of fermented soybeans, tauco has a sour and slightly salty taste. To make tauco, soybeans are boiled and then mixed with wheat flour or other flour, depending on the manufacturer who makes it, then stored until mold grows.
Tauco with green tempeh and eggplant chili sauce is one of the dishes that is always present at traditional Indonesian community party receptions. Tauco with green tempeh and eggplant chili sauce has a spicy, sour and salty taste, and this dish is one of the favorites of Indonesian people. There are two ways to make tempeh and eggplant green chili touco, the first way is to fry the tempeh first before making the chili sauce, this way dry green chili touco will be produced. while the second way is to mix the tempeh and eggplant at the same time, the tempeh doesn't need to be fried, this way you will produce wet tauco with green chili sauce, tempeh and eggplant and most Indonesian people like this one. In party dishes, usually tauco with green chili sauce, tempeh and eggplant, using only green chilies. But today I will combine it with red chilies, in fact I only use a little green chilies, because I like the combination of red chili sauce with tauco.
The Ingredients
The ingredients I use are :
500 grams round green eggplant
1 large tempeh
100 grams red chili
10 green chilies (If you like a super spicy taste, increase the amount of green chilies)
5 garlic
1 Peking onion
1 tomato
1 tablespoon tauco
1/2 tablespoon salt
1 packet ground pepper
250 mL water
50 mL cooking oil
Preparation
1.peel the garlic and Peking onions.
2.remove the stalks of green chilies and red chilies.
3.Wash green chilies, red chilies, garlic, Peking onions and tomatoes.
4.slice Peking onions and green chilies.
for the green chilies, slice them at a slight angle like this.
5.Puree the garlic, red chilies and tomatoes.
6.Cut the tempeh into dice or square shapes.
7.Cut the eggplant into two or three pieces lengthwise, then wash it clean.
How to cook
1.heat the cooking oil.
2.saute peking onions and green chilies until fragrant.
3.then add the red chili sauce.
4.add the tauco, cook until it boils.
5.after the chili sauce boils, then add the tempeh pieces,stir until all ingredients are mixed.
6.add the eggplant pieces.
7.add salt.
8.add ground pepper to taste.
9.add water.
10.cook until the eggplant becomes soft.
The result
Tauco with green tempeh and eggplant chili sauce is ready to be served. The distinctive sour aroma of tauco makes me want to eat it.
Serving method
Serve the green chili tauco, tempeh and eggplant with warm rice.
